I have a little bit of experience in restocking but I've been gone for a few months and don't really remember what is good for stocking other than pizza, and I never really made a large amount of profit from pizza. It was very little at a time.
At size 37 would it be in my best interest to stick to one category? If so what category would you recommend? I currently have 14k on hand and 375,529 in the bank, but I'd like to not pull much out of the bank, as I am trying to get my daily interest up.
Category or No?

Stamp, Pharm, Baked, Food and Card are good quick profit shops to restock in, possibly book also, but I have never tried there properly.
Your bank interest is going to be pretty low, maybe try some item investment for a better long term return on your NP.

Is a guide to investment I wrote and it might give you some ideas for your shop, especially if you decide you want to stick to a category, to be honest I think you should only do a category if you enjoy it as malling, does not make the massive amount of NP it used to (less people play Neopets these days). I use malling as an extra occasional NP boost, but you really cannot rely on it to earn you NP, most of my shop profit still comes from restocking.
Check a keyquest guide also to see what has been handed out recently as seasonal prizes and avoid those items in the shops you decide to try, they are unlikely to get you much profit and may indeed be a loss.

I have a size 18 shop right now, (thats about all i can manage) and I find that having a themed shop and selling a specific category is easier (and certianly easier to advertise) Food sells very quickly...

If you don't want to reduce your bank account you're going to have to put all your profits back into your shop.

With a shop size of only 37 maybe you should start by selling off the things in your SDB that you don't want at below SSW prices. That would bring in some cash to restock and increase your shop size.

I don't really have much in my SDB that is worth anything and the things that are, are there for the avatar.
Books is working for me though :)
