And someone else asked how you get your grains. If vegetarians can live without meat, or vegans can live without animal products then someone can live without wheat. Wheat is in a lot of products and is hard to tell because wheat is an ingredient in many different foods. It's not just keeping away from strictly wheat she has to worry about, but a lot of cookies and stuff have gluten which are in wheat. Many people with celiac disease don't know they have it, because it's not an allergy per se, it's affect the lining of your intestines which reduces your ability to absorb nutrients. You can't tell it's having negative effects on your body as it's not like an allergic reaction. It's genetic though, so people with relatives that have it are tested.

Besides wheat, there's rice, quinoa, corn, amaranth (not really a grain), millet... I love making wheat-free mac & cheese with quinoa/corn noodles & cheddar cheese :D

Hi All! This is more then you probably want to know but I will share a little bit about me, and if I bore you to death, just stop reading LOL! Mine is not an official allergy; it is considered intolerance. I get really sick Nausea and Migraine headaches that were lasting 3 weeks. I went off of wheat and it is hard it is in everything, and it has many names. I am not a true Celia (which is someone that has an allergy to all sorts of gluten) I can eat Rye seeds, I can eat Oatmeal, and Rice and Corn. I cam eat foods that are processed in plants where there are foods made with wheat, I just cannot eat wheat, flour, gluten etc... I eat a piece of bread as small as a quarter and I am sick for days. I was not like this until I was in an accident many years ago and could not get rid of these headaches, a doctor figured it had to be a combination of all the medications they had me on and that illness from the accident that caused such a stressor to my system that it began to reject wheat. He thought in time I would be able to go back and eat it but it turned out that every time I try that quarter size piece that I get really sick. I am so used to it now that I just eat as though wheat is not in my diet. What do I miss the most? REAL PIZZA... I live near Buffalo & Niagara Falls, which is the Pizza and chicken wing capital of the universe. I cannot eat that pizza but those wings are damn good too LOL! It makes up for it. I hate cooking and it has forced me to learn to do that too, because the days of microwave dinners and canned food are basically a long gone thing. I do treat myself to Mac and cheese once in awhile, but they are sooooo expensive that I can only afford a little here and there. So have you had your thing you never heard of before lesson? If you have a friend with this, make their day, bake them some gluten free cookies or cake; you will probably make their whole day! (Even the mixes are expensive) but for the most part they are treats not regular food items for peeps like me.
